Chambourcin, sourced from Southern Illinois in the Shawnee Hills AVA, with an old world spin! Rather than our usual oak aged style red, this wine was aged for 12 months in terracotta amphoras, making it one of the most unique Illinois we have ever produced.
Aging wine in this type of vessel dates some 6,000 years ago. While the wine ages in the amphoras, which are porous (allowing for some oxygen contact), it creates depth and concentation of flavors and tannins…bringing this wine to new levels of flavor and intensity.
The 2018 Chambourcin Amphora has ripe notes of cassis, plum and black cherry with focused, deep tannins and minerality from the clay vessel. To date, this wine will be age worthy and complex. Decant now before drinking or plan to lay this wine down for up to 10 years.
